Description

Flaky puff pastry tarts with caramelized shallots and creamy feta cheese baked upside-down for a gourmet yet easy appetizer or light meal.


Ingredients

  • 1 sheet puff pastry, thawed
  • 4 medium shallots, peeled and halved
  • 3 tbsp olive oil
  • 2 tbsp honey or maple syrup
  • 1/2 cup feta cheese, crumbled
  • 1 tbsp fresh thyme leaves
  • Salt and pepper to taste
  • 1 tbsp balsamic glaze (optional, for serving)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet, heat olive oil over medium heat and add the shallots. Cook for 5–7 minutes until softened and lightly caramelized. Add honey and thyme and cook for 2 more minutes.
  3. Cut the puff pastry into 4 equal squares. Place the caramelized shallots in the center of each square.
  4. Sprinkle feta cheese over the shallots and season with salt and pepper.
  5. Fold the corners of the puff pastry over the filling, pinching gently to seal, leaving some gaps.
  6. Place the tarts upside-down (sealed side down) on the prepared baking sheet.
  7. Bake for 20–25 minutes, until the pastry is golden and puffed.
  8. Flip the tarts right-side-up, drizzle with balsamic glaze if desired, and serve warm.

Notes

  • Use goat cheese instead of feta for a creamier flavor.
  • Best served immediately but can be reheated in the oven.
  • Add a sprinkle of chopped walnuts for extra crunch.
