Description
Flaky puff pastry tarts with caramelized shallots and creamy feta cheese baked upside-down for a gourmet yet easy appetizer or light meal.
Ingredients

- 1 sheet puff pastry, thawed
- 4 medium shallots, peeled and halved
- 3 tbsp olive oil
- 2 tbsp honey or maple syrup
- 1/2 cup feta cheese, crumbled
- 1 tbsp fresh thyme leaves
- Salt and pepper to taste
- 1 tbsp balsamic glaze (optional, for serving)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a skillet, heat olive oil over medium heat and add the shallots. Cook for 5–7 minutes until softened and lightly caramelized. Add honey and thyme and cook for 2 more minutes.
- Cut the puff pastry into 4 equal squares. Place the caramelized shallots in the center of each square.
- Sprinkle feta cheese over the shallots and season with salt and pepper.
- Fold the corners of the puff pastry over the filling, pinching gently to seal, leaving some gaps.
- Place the tarts upside-down (sealed side down) on the prepared baking sheet.
- Bake for 20–25 minutes, until the pastry is golden and puffed.
- Flip the tarts right-side-up, drizzle with balsamic glaze if desired, and serve warm.
Notes
- Use goat cheese instead of feta for a creamier flavor.
- Best served immediately but can be reheated in the oven.
- Add a sprinkle of chopped walnuts for extra crunch.
