These Vegan Almond Coconut Blondies are chewy, rich, and full of nutty flavor, made with almond butter, shredded coconut, and maple syrup. A naturally sweetened treat that’s perfect for snacking or dessert.

- 1/2 cup almond butter
- 1/3 cup coconut oil, melted
- 1/2 cup maple syrup
- 1/4 cup coconut sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour (or gluten-free flour blend)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup shredded unsweetened coconut
- 1/3 cup chopped almonds
- 1/4 cup dairy-free chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- In a large bowl, mix together almond butter, melted coconut oil, maple syrup, coconut sugar, and vanilla extract until smooth.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Add the dry ingredients to the wet and stir until just combined.
- Fold in shredded coconut, chopped almonds, and chocolate chips (if using).
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 20–25 minutes, or until the top is golden and a toothpick inserted comes out clean or with just a few moist crumbs.
- Let cool completely in the pan before cutting into squares.
Notes
- For extra texture, toast the coconut and almonds before adding.
- Can be stored in an airtight container for up to 5 days or frozen for up to 2 months.
- Use gluten-free flour to make this recipe fully gluten-free.
