- 1 1/2 cups crushed graham crackers or ladyfingers
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 8 oz mascarpone cheese
- 3/4 cup granulated sugar
- 2 teaspoons vanilla extract
- 2 tablespoons all-purpose flour
- 3 large eggs
- 1/4 cup strong brewed espresso or coffee, cooled
- 1 tablespoon coffee liqueur (optional)
- 1 cup heavy cream, whipped
- 2 tablespoons unsweetened cocoa powder (for dusting)
- Additional ladyfingers for layering (optional)
Instructions
- Preheat oven to 325°F (163°C). Grease a 9-inch springform pan and wrap the outside with foil to prevent leaking.
- Combine crushed graham crackers or ladyfingers with sugar and melted butter. Press mixture into the bottom of the pan to form the crust. Bake for 10 minutes and let cool.
- In a large bowl, beat cream cheese and mascarpone together until smooth and fluffy. Add sugar, vanilla, and flour; mix until combined.
- Add eggs one at a time, beating on low speed until just incorporated.
- Stir in espresso and coffee liqueur (if using).
- Pour half the cheesecake batter over the crust. Add a layer of dipped ladyfingers if desired, then pour the remaining batter over the top.
- Place pan in a water bath and bake for 55–65 minutes, or until the center is just set and slightly wobbly. Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour.
- Remove from oven and refrigerate for at least 4 hours or overnight.
- Before serving, top with whipped cream and dust with cocoa powder. Garnish with additional ladyfingers or chocolate shavings if desired.
Notes
- Use instant espresso powder dissolved in hot water if fresh espresso isn’t available.
- Let the cheesecake sit at room temperature for 15–20 minutes before slicing for clean cuts.
- This dessert is even better the next day as the flavors deepen.
