- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 3 tbsp olive oil, divided
- 3 garlic cloves, minced
- 1 tbsp lemon zest
- 3 tbsp fresh lemon juice
- 1 tsp dried oregano
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- In a bowl, whisk together 2 tablespoons olive oil, minced garlic, lemon zest, lemon juice, oregano, paprika, salt, and pepper.
- Add chicken pieces to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 2 hours).
- Heat remaining tablespoon of olive oil in a large skillet over medium-high heat.
- Add marinated chicken pieces in a single layer. Cook for 4–6 minutes, turning occasionally, until golden brown and cooked through.
- Remove from heat. Garnish with fresh chopped parsley and serve warm.
