Description

Zucchini Casserole with Stuffing Mix is a comforting, savory side dish that combines tender zucchini, creamy soup, and flavorful herb stuffing. Perfect for potlucks, family dinners, or holiday spreads.


Ingredients

  • 4 cups zucchini, sliced (about 23 medium zucchinis)
  • 1/2 cup onion, finely chopped
  • 1 can (10.5 oz) cream of chicken or cream of mushroom soup
  • 1 cup sour cream
  • 1 box (6 oz) stuffing mix (herb-flavored preferred)
  • 1/2 cup melted butter
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large skillet, sauté zucchini and onions over medium heat for 5–7 minutes until just tender. Drain excess liquid.
  3. In a large bowl, mix the cream of soup, sour cream, garlic powder, and black pepper until smooth.
  4. Add the cooked zucchini and onions to the bowl and stir to combine.
  5. In a separate bowl, combine the stuffing mix with melted butter and mix until evenly coated.
  6. Spread half of the stuffing mixture in the bottom of the prepared baking dish.
  7. Top with the zucchini mixture, then sprinkle the remaining stuffing over the top. Add shredded cheese if using.
  8. Bake uncovered for 30–35 minutes, or until golden and bubbly.
  9. Let rest for 5 minutes before serving.

Notes

  • Use cream of mushroom soup for a vegetarian version.
  • You can substitute Greek yogurt for sour cream for a lighter option.
  • Add cooked chicken or turkey to make it a main dish.
