- 4 cups zucchini, sliced (about 2–3 medium zucchinis)
- 1/2 cup onion, finely chopped
- 1 can (10.5 oz) cream of chicken or cream of mushroom soup
- 1 cup sour cream
- 1 box (6 oz) stuffing mix (herb-flavored preferred)
- 1/2 cup melted butter
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a large skillet, sauté zucchini and onions over medium heat for 5–7 minutes until just tender. Drain excess liquid.
- In a large bowl, mix the cream of soup, sour cream, garlic powder, and black pepper until smooth.
- Add the cooked zucchini and onions to the bowl and stir to combine.
- In a separate bowl, combine the stuffing mix with melted butter and mix until evenly coated.
- Spread half of the stuffing mixture in the bottom of the prepared baking dish.
- Top with the zucchini mixture, then sprinkle the remaining stuffing over the top. Add shredded cheese if using.
- Bake uncovered for 30–35 minutes, or until golden and bubbly.
- Let rest for 5 minutes before serving.
Notes
- Use cream of mushroom soup for a vegetarian version.
- You can substitute Greek yogurt for sour cream for a lighter option.
- Add cooked chicken or turkey to make it a main dish.
