Zucchini Patties are a simple, savory, and satisfying way to use up fresh zucchini. Lightly crisped on the outside and tender on the inside, these veggie-packed fritters make a perfect side dish, snack, or vegetarian main course.

- 2 medium zucchinis, grated
- 1/2 tsp salt
- 1/4 cup finely chopped onion
- 1/4 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1 large egg
- 1 clove garlic, minced
- 1/4 tsp black pepper
- 2 tbsp chopped fresh parsley (optional)
- 2–3 tbsp olive oil, for frying
Instructions
- Grate the zucchini and place it in a colander. Sprinkle with salt and let sit for 10–15 minutes to draw out moisture.
- After resting, squeeze out as much liquid as possible using a clean towel or cheesecloth.
- In a large bowl, combine zucchini, onion, Parmesan, breadcrumbs, egg, garlic, pepper, and parsley (if using). Mix until well combined.
- Form the mixture into small patties (about 2 tablespoons each).
- Heat olive oil in a skillet over medium heat. Fry the patties in batches for 3–4 minutes per side or until golden and crispy.
- Transfer to a paper towel-lined plate to drain. Serve warm.
Notes
- Serve with sour cream, tzatziki, or your favorite dipping sauce.
- Make the patties ahead and refrigerate; fry just before serving.
- For a gluten-free option, use gluten-free breadcrumbs or almond flour.
- Shred zucchini finely for a smoother texture or coarsely for more bite.
