Description

Zucchini Pie is a savory, crustless dish made with fresh zucchini, cheese, and herbs — perfect as a light lunch, side dish, or vegetarian main course.


Ingredients

  • 3 cups zucchini, thinly sliced
  • 1 small onion, finely chopped
  • 1 cup shredded cheddar or mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3/4 cup all-purpose flour
  • 1/4 cup vegetable oil or olive oil
  • 4 large eggs
  • 1/2 tsp baking powder
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano or Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9-inch pie dish or baking dish.
  2. In a large bowl, whisk the eggs, then add oil, flour, baking powder, garlic powder, herbs, salt, and pepper. Mix until smooth.
  3. Stir in the zucchini, onion, cheddar, and Parmesan until well combined.
  4. Pour the mixture into the prepared dish and spread evenly.
  5. Bake for 35–40 minutes or until golden and set in the center.
  6. Let cool slightly before slicing and serving warm or at room temperature.
