- 3 cups zucchini, thinly sliced
- 1 small onion, finely chopped
- 1 cup shredded cheddar or mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 3/4 cup all-purpose flour
- 1/4 cup vegetable oil or olive oil
- 4 large eggs
- 1/2 tsp baking powder
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano or Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 9-inch pie dish or baking dish.
- In a large bowl, whisk the eggs, then add oil, flour, baking powder, garlic powder, herbs, salt, and pepper. Mix until smooth.
- Stir in the zucchini, onion, cheddar, and Parmesan until well combined.
- Pour the mixture into the prepared dish and spread evenly.
- Bake for 35–40 minutes or until golden and set in the center.
- Let cool slightly before slicing and serving warm or at room temperature.
Notes
- Pat zucchini dry with a paper towel to reduce moisture for better texture.
- Can be made ahead and reheated — great for meal prep.
- Add chopped cooked bacon or herbs like basil for variation.
