Ingredients

- 4 medium zucchinis
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup mini pepperoni slices or chopped toppings of choice
- 1 tsp Italian seasoning
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh basil, for garnish
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Slice zucchinis in half lengthwise and scoop out some of the center to create a boat shape.
- Brush zucchini halves with olive oil and season with salt and pepper.
- Place zucchini on the baking sheet and bake for 5-7 minutes to soften slightly.
- Remove from oven, fill each zucchini with marinara sauce, sprinkle with mozzarella, add pepperoni or toppings, and sprinkle with Parmesan and Italian seasoning.
- Bake for an additional 10-12 minutes, until cheese is melted and bubbly.
- Garnish with fresh basil before serving.
